Over the next few months, we will be highlighting several recipes we use with our all natural pecan butter!  We hope you enjoy!

If you're feeling low on energy and need a pick-me-up, our Pecan Butter Energy Bites are perfect to give you the boost you need. You're kids will love them too! Find the recipe below:

1 C. Dry Oatmeal**
½ C. Goodson Pecans Pecan Butter (any flavor - we used Creamy)
½ C. Chocolate Chips*
½ C. Ground Flaxseed
½ C. Honey
1 Teaspoon Real Vanilla Extract

*Optional: Coconut flakes or cranberries
** We lightly chop the oatmeal in blender. We have found that they hold together even better.

Directions: Mix everything together and roll into small bite sized balls. Store them in the refrigerator or airtight container. Enjoy! Be sure to use the hashtag #GoodsonPecansCreations for a chance to be featured on our Instagram or Facebook!

Pecan Butter Vinaigrette Salad Dressing

This goes great with a grilled chicken salad!!

Pecan Butter Vinaigrette Salad Dressing

2/3 Cup of Light Tasting Oil (i.e. Canola Oil or Light Extra Virgin Olive Oil)

2/3 Cup of Orange Juice

2   Tablespoons Honey

2   Tablespoons Creamy Original Pecan Butter

1/2 Teaspoon grated fresh ginger

1/2 Teaspoon powdered garlic

1   Teaspoon crushed red pepper flakes (optional)

Mix all of the ingredients together into a jar.  Shake very well before pouring.  Serve immediately over mixed salad or refrigerate until use.

How to Store Pecans

We have many people ask us about the best way to store their pecans.  Pecans are perishable because of their high oil content and they must be stored properly to maintain good quality.  Whether you buy pecans in bulk use them throughout the year or just want to get a couple of pounds to snack on each day, it is helpful to know how to store your pecans.  Here are some helpful tips to keep your pecans fresh all year:

  • At home, unshelled pecans can be stored in a cool, dry place for three to six months. 
  • Shelled pecans need to be either refrigerated in airtight containers for up to nine months, or frozen in zipper locked freezer bags for up to two years. 
  • Pecans can be frozen and refrozen for at least two years without loss of flavor or texture.

What My Kids and Pecan Trees have in Common

My wife and I have been blessed with four great children.  While they each have their own unique personalities, our love for each of them is deeply the same.  Our oldest daughter is, for the most part, quiet and reserved but, given the opportunity, loves to be on stage acting or dancing.  Our nine year old son loves to talk, tell jokes, and has never met a stranger.  Our seven year old loves animals and looks forward to the time anyone will play “puppy” with her.  If you want to get our youngest son excited, tell him it is time to eat.  They are amazingly unique, but despite all of their differences, each one is a big part of the Goodson family.
