Healthy Lunches with Pecans

School is almost back in full swing and we know that being back on a schedule can be nice but meal planning can be hard. So we’ve got three easy, healthy and delicious lunches with pecans for you. Pecans have great antioxidant content, are healthy fats and have been proven to help with weight management in satiety and fullness.

2. Chicken Salad with Toasted Pecan Pieces —

Recipe

Ingredients —

  • 1 Rotisserie Chicken

  • 2 Cups of grapes (red or green)

  • 3 stalks of celery

  • ¼ -½ Cup Pecan pieces (depending on how much you want)

  • ⅔ C mayonnaise

  • Salt and pepper for seasoning

Prepare —

  • Preheat oven to 350℉

  • Spread pecan pieces on a baking sheet. Once oven

1. Pecan Butter and Jelly Sandwich — a childhood favorite that is sure to bring comfort. It’s also great for anyone who has a peanut allergy but still wants to be nostalgic. It tastes different than a traditional PB&J but still delicious. Serve with your favorite vegetables, like carrots, bell peppers, cucumbers or celery sticks.

3. Salad with Spicy Ranch Pecans —

Adding Spicy Ranch Pecans to any salad is delicious! Pictured here is a scoop of chicken salad on a bed of lettuce, parmesan cheese, and our spicy ranch pecans. We drizzled Caesar dressing on top and we highly recommend you give it a try!
