Pecan Snowball Cookies
Also commonly referred to as Mexican Wedding Cookies, these cookies will melt in your mouth. These cookies are have minimum ingredients, are very easy to make and perfect for tea parties or holiday gatherings. Toast the pecan pieces for 5-8 minutes at 350℉ to enhance the flavors even more. Enjoy!
Ingredients
1 cup (2 sticks) unsalted butter, softened
½ cup powdered sugar
1 teaspoon vanilla extract
¼ teaspoon salt
2 ¼ cups all-purpose flour
½ cup Pecan Pieces (toasted, optional)
Powdered sugar for coating
Directions
Preheat oven to 400℉. Link baking sheet with parchment paper and set aside.
In a large bowl, cream the butter, powdered sugar and vanilla until smooth.
Mix in salt and flour until just combined. Add the pecan pieces.
Using a tablespoon, shape dough into 1-inch balls and place on prepared baking sheet.
Bake for 10-12 minutes or until lightly golden brown.
Remove from oven and let cool slightly, about 2-3 minutes. Toss in powdered sugar and let cool completely on wire racks.
