Simple Chicken Salad with Fancy Shelled Pecan Halves
Chicken salad is a quick, healthy and delicious entree. It is versatile in how you can serve it; on a bed of lettuce, in a pita pocket, as a sandwich, by itself, with crackers, the possibilities are endless. This 7-ingredient recipe will only take you a short time to whip up and it’s sure to become a family favorite. With a lean source of protein, fruit (grapes), a vegetable (celery) and a healthy fat (pecans) it will leave you satisfied and full for a long period of time.
Ingredients
2 chicken breast, cooked, chopped or shredded
3 stalks celery, chopped
1 cup grapes, chopped
¼ cup mayonnaise
Salt, to taste
Pepper, to taste
Directions
Cook chicken according to your liking. Let cool and then chop or shred.
While the chicken is cooking, chop the grapes, celery and pecan halves.
In a large bowl, combine the chicken, grapes, celery, pecan halves and mayonnaise. Mix until well combined.
Season with salt and pepper to taste.
Serve alongside a greens, crackers or in a pita pocket for a quick lunch.
